A bout and the day's card
Torikumi can mean an individual sumo bout or the arranged list of bouts for a tournament day. Context usually makes the meaning clear.
A grand tournament does not begin with a complete 15-day bracket. Matchups are announced in stages as the event unfolds. Officials consider rank, current record, prior meetings during the tournament, and the developing championship race. Wrestlers from the same stable are normally kept apart, with limited exceptions such as a championship playoff.
That flexible schedule lets the final days place leading wrestlers against stronger opposition and, where possible, against each other. It is why the next day's card may not be available early in the current day's action.
